Business Insider’s Anneta Konstantinides tested Gordon Ramsay’s 10-minute summer pasta after trying other quick Ramsay pasta recipes. The dish is a shrimp scampi with angel hair pasta, designed for a fast dinner when you do not want to spend long over a hot stove. Its summer appeal comes from shrimp, cherry tomatoes, lemon, basil, and a short cooking window.
The recipe highlighted by Business Insider is for two and includes 8 ounces of angel hair pasta, 5 1/2 ounces of raw shrimp, banana shallots, garlic, capers, lemon zest and juice, cherry tomatoes, white wine, vegetable or fish stock, basil, chili flakes, and Parmesan for serving. Ramsay says any very fine pasta works, including spaghettini, tagliolini, or vermicelli. Konstantinides noted that she could not find banana shallots locally and used an extra regular shallot while testing the recipe.
The excerpted cooking process starts with bringing salted pasta water to a boil and prepping the ingredients before the pan work begins. Konstantinides halved the cherry tomatoes, zested the lemon, minced the garlic, and peeled and sliced the shallots. She also followed Ramsay’s basil tip from his cookbook: gather the small leaves, roll them inside the biggest leaf like a cigar, then chop with a large knife.
Konstantinides began the cooking phase by heating one tablespoon of olive oil in a nonstick pan over medium heat. She added the shallots first with salt and pepper, then added garlic and a pinch of chili flakes, letting the garlic and shallots cook together for two minutes. After that, she added the cherry tomatoes and cooked them for 30 seconds, keeping the dish moving quickly.
